Details on Manchester Noodle Bar

Richmond Magazine.com has the details on the latest culinary addition to Manchester. Ejay Rin Noodle Bar will open up in the Corrugated Box building taking over the space of now defunct Savor/Lunch Porter. Contrary to popular belief a noodle bar is not where pasta goes to get drunk and check out other noodles. A serious explanation from 1/2 owner Bill Foster;

Why a noodle bar? “We don’t have one,” Foster says. “There are pho places,” he adds, but this will be ramen — a different style. Pho uses pasta and a lighter broth, while ramen broth is more comparable to a French consommé.

“It’s a way to provide better ingredients at a lower price,” he continues. “It’s not totally farm to table, but we can do more along that line and not have to charge an arm and a leg.” Because of the variety of ingredients in one dish, Foster says, “you don’t have to entice people with 12 ounces of meat.” He says the basic menu likely will be in the $8 to $12 range; specials might be a little more expensive, but he and Howell plan to keep prices under $20.
